Handy Corn Fritters







Aptly names, these Handy Corn fritters are a sure fire way to bring the sweet and smoky flavors of summer corn relish to your entertaining table all year around! Using pantry staples, they’re quick and easy to assemble. They are best when immediately served, accompanied by a lively tart yogurt dipping sauce.
Keeping it Real Disclosure: I should tell you. THIS is where I work. Cool, right! Of the many things I do with Rick’s Picks, creating new exciting recipes that integrate pickled vegetable products is of the most creatively satisfying things I could imagine spending my day processing. Yes, Rick really does exist, and No, he doesn't pay me extra to say nice things. Now that you know, we’re ready to proceed. Oh, by the way, did you see this and this? O.K., now I'm finished!



The Method

1 cup of Rick’s Picks Handy Corn pickle relish, drain and reserve brine to the side

1 large egg

1/3 cup of grated Mexican Cotija Cheese

pinch of salt

4 tablespoons of vegetable or extra virgin olive oil for frying

½ cup of all-purpose flour

½ teaspoon of baking powder

The Madness
Can’t get any easier than this!

1. Blend dry ingredients of flour, cotija, baking powder, and salt into a medium bowl.

2. Mix until well combined.

3. Add reserved cup of drained Rick’s Picks Handy Corn pickle relish. Leave reserved brine to the side for yogurt dipping sauce.

4. Lightly whisk and add egg.

5. Mix until well combined. Mixture will be wet and slightly sticky. PERFECT!

6. Heat oil in heavy bottomed skillet over medium high heat until it reaches 350°F. Oil should be a generous layer coasting the bottom of skillet. Shimmering, just before smoking.

Used was our go-to 12” cast iron.

A bit of batter used as a tester into the skillet should sizzle immediately.

7. Using a tablespoon as a guide, place generous mounds of batter into the heated oil. Smooth rounds into 1 – 1 1/2” circles.

8. Cook until fritters are browned approximately 3 minutes per side.

9. Drain on cooling rack.

Handy Yogurt Sauce
1/3 cup of reserved Rick’s Picks Handy Corn pickle relish brine

1 – 6oz. container of Greek Yogurt

1 teaspoon of cilantro, washed and torn

pinch of salt (optional)

Mix all ingredients until well blended. Done! Don’t forget the fritters! They’re still piping hot!
